Description

1 and ½ cups granulated sugar

1 and ½ cups water

3 to 4 fresh mint sprigs

For the Cucumber Mint Lemonade

1 and ½ cups cucumber juice, made from about 3 to 4 cucumbers

5 and ½ cups filtered water plus a splash for blending

1 and ½ cups freshly squeezed lemon juice, from approximately 10 to 12 lemons

Extra mint sprigs, optional, for garnish

Lemon slices, optional, for garnish

Cucumber slices, optional, for garnish


Instructions

Step 1: Make the Mint Simple Syrup

In a small saucepan, combine sugar, water, and mint sprigs. Bring the mixture to a gentle boil, then reduce the heat to low. Stir occasionally until the sugar dissolves completely. Turn off the heat and let the mint steep in the syrup for about 10 minutes. Remove the mint sprigs and set the syrup aside to cool.

Step 2: Prepare the Cucumber Juice

There are two easy ways to extract cucumber juice, depending on what tools you have.

Method 1: Using a Blender

  1. Cut off the ends and peel the cucumbers.

  2. Slice them into small chunks.

  3. Add a handful of chunks to a blender with a splash of water.

  4. Blend until smooth. Continue adding chunks and blending until all are processed.

  5. Strain the puree through a fine-mesh sieve into a bowl or measuring cup to collect about 1 and ½ cups of juice. Press gently with a spoon to extract more liquid if needed.

Method 2: No Blender Required (Box Grater Method)

  1. Wash and peel the cucumbers if desired.

  2. Roughly chop them into large pieces.

  3. Using the medium holes of a box grater, grate the cucumber into a bowl.

  4. Scoop the grated pulp into a clean cheesecloth or place it in a fine-mesh sieve.

  5. Squeeze firmly over a bowl to extract the juice. Aim for about 1 and ½ cups of liquid.

This manual method is just as effective and requires nothing more than a grater and some elbow grease.

Step 3: Strain the Juice

Place a fine-mesh sieve over a large bowl or measuring cup. Pour the cucumber puree into the sieve and let it drain until you collect about 1 and ½ cups of juice. For a clearer result, press gently with a spoon. You can also use a cheesecloth if you prefer an extra smooth juice. Any extra juice can be frozen for future use.

Step 4: Mix the Lemonade

In a large pitcher, combine the cooled mint syrup, cucumber juice, filtered water, and lemon juice. Stir well until fully mixed.

Step 5: Chill and Serve

Place the pitcher in the fridge to chill for at least 30 minutes. When ready to serve, pour over ice and garnish with fresh mint sprigs, lemon slices, or cucumber rounds. Enjoy immediately for the best flavor.
